Grilled Chicken with Peach Salsa
Ingredients:
Marinade
- 4 chicken breasts
- 3 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
- 1 tsp cayenne pepper
- 2 cloves garlic, minced
- Salt and pepper to taste
Peach Salsa
- 1 peach
- 1/2 cucumber
- 1 jalapeño, seeded
- 2 Tbsp red onion
- 2 Tbsp basil or cilantro
Directions:
Place all marinade ingredients in a plastic bag with the chicken and allow to sit refrigerated for at least 30 minutes.
While chicken marinates, dice peach, cucumber, jalapeño, and onion. Lightly toss in a small bowl. Finely chop basil or cilantro and sprinkle on top.
Grill chicken at 425° for approximately 4 minutes each side, or until done. Remove from the grill and let rest under foil for an additional 4 minutes.
Top chicken with salsa and enjoy! Pairs well with summer vegetables such as zucchini, yellow squash, or a salad and corn, potatoes, or rice for a complete meal.
